Lion’s Mane Brain Boost Pancake

Boost your morning with a Lion’s Mane Brain Boost Pancake! Made with cornbread mix, savory spices, and fresh Lion’s Mane mushrooms, this golden, crispy pancake is delicious topped with maple syrup or turned savory with salsa, cheese, or guacamole. A tasty way to fuel your body and your brain!

Ingredients:

  • 1/4 cup Bob’s Red Mill Cornbread Mix

  • Southwest spices (to taste)

  • Pinch of salt

  • 1 egg

  • Water or milk (enough to make a pancake batter consistency)

  • 2 tablespoons chopped Lion’s Mane mushrooms

  • 2 tablespoons butter (for cooking)

  • Optional toppings: maple syrup, salsa, crème, cheese, guacamole

Instructions:

  • In a bowl, combine cornbread mix, southwest spices, salt, egg, and enough water or milk to create a smooth pancake batter.
  • Stir in the chopped Lion’s Mane mushrooms.
  • Heat 2 tablespoons of butter in a skillet over medium heat.
  • Pour in the batter and cook until golden brown and crispy on the edges.
  • Flip and cook the other side until golden.
  • Plate and serve warm.
 
Serving Suggestions:
  • Sweet: drizzle with maple syrup.

  • Savory: top with salsa, crème, cheese, or guacamole.
