Lion’s Mane Brain Boost Pancake
Ingredients:

1/4 cup Bob’s Red Mill Cornbread Mix

Southwest spices (to taste)

Pinch of salt

1 egg

Water or milk (enough to make a pancake batter consistency)

2 tablespoons chopped Lion’s Mane mushrooms

2 tablespoons butter (for cooking)

Optional toppings: maple syrup, salsa, crème, cheese, guacamole
Instructions:
- In a bowl, combine cornbread mix, southwest spices, salt, egg, and enough water or milk to create a smooth pancake batter.
- Stir in the chopped Lion’s Mane mushrooms.
- Heat 2 tablespoons of butter in a skillet over medium heat.
- Pour in the batter and cook until golden brown and crispy on the edges.
- Flip and cook the other side until golden.
- Plate and serve warm.
